Toasted Cheddar Cheese Sandwich With Buttery Leeks - Recipe

The perfect combination - slowly braised leeks and tangy mature Cheddar, what a treat!
With St David's Day this Sunday what better way to end the weekend with an utterly delish toasted sandwich, that's not quite like the rest.

 

This recipe uses sourdough bread, but you can use any that takes your fancy. All we would suggest is to cut the bread quite thick and butter lightly over the outside prior to toasting. This stops the bread sticking and gives a golden, crispy finish.

We recommend putting something good on the television and making a cup of tea to accompany this buttery, toasted dish.

What You'll Need
30g butter, plus extra to butter the bread
3 cups finely sliced and cleaned leeks (white and pale green parts)
Sea salt and freshly ground white pepper
8 slices sourdough bread, fairly thickly cut
150g 12 month mature Cheddar, grated

Instructions
1. Heat the Breville electric frying pan and melt the butter. Sauté the leeks for 5 – 7 minutes on setting 4 – 6. Season with salt and freshly ground white pepper, then turn off and allow to cool.
2. Heat the Breville Healthsmart Grill on the sandwich setting.
3. Divide the braised leeks and cheese between the four slices of bread and spread to fill each evenly. Top with the second slice of bread.
4. Lightly butter each of the out side slices of the sandwich *tip - melt the butter and then bush this on to make it easier.
5. When the Grill is ready, place the buttered sandwiches on, close and toast until golden brown.
