Cashew Lime Green Smoothie

 

For all the people who have said ‘New Year, New Me’ as regards getting fit and healthy this might just be right up your street. A delicious cashew based smoothie.

Incredibly refreshing and light tasting from the lime, yet dense enough to keep you full with the fiber rich spinach, fresh herbs, dates, and mango. The cashews are the star ingredient grounding this smoothie and taking the texture to a whole other level of creaminess- sans any dairy!

Cashew Lime Green Smoothie is a great cleansing smoothie in the way that’s in complete with fiber to keep your digestion moving, fresh cilantro which helps chelate heavy metals in the body, a touch of fresh mint to soothe digestion while ginger gives your metabolism a little kick with the heat and also stimulates digestion. Overall, a digestive friendly smoothie that tastes amazing and will make you feel great afterwards.

 

Ingredients

• 3 cups organic spinach
• ½ fresh mango
• ½ cup coconut milk
• ½ cup water
• ⅓ cup raw cashews
• ½ inch fresh ginger, peeled
• 1 tablespoon fresh cilantro
• 1 tablespoon fresh mint
• 1 medjool date, pitted
• 1 teaspoon organic powdered wheatgrass, optional
• 1 teaspoon bee pollen, optional
• Juice of 2 limes
• Pinch of sea salt

Instructions

1. Pour all ingredients in a blender and blend until smooth. Add ice to chill to desired temperature and serve immediately.
2. Enjoy!
