Grapefruit Soda Cocktail

With the Great British weather still indifferent, and summer on the slightly grey horizon it’s only natural people are thinking about jetting off to climates new.  However if you’re not lucky enough to be getting away then sit back, close your eyes and enjoy one of these.



This is a recipe that is simple to make, but produces a result that outshines anything you can get from a can. The grapefruit flavor is lovely and pronounced, with the lemon to add just the right zing.
And don't be disheartened if you are not an alcohol drinker, or you aren’t able to drink, because this is just as delicious in a mocktail version - simply omit the vodka or replace it with flavoured water and you got yourself an everyday treat!

In fact you can give it to the children during sunny afternoons without the alcohol and with it you can change it into a brilliant cocktail to enjoy as the sun begins to set.  And if there isn’t any sun just turn the heating up, lay back and close your eyes!

Also whether you have it with or without vodka remember to garnish with lemon slices and ice for a drink that tastes of a cool breeze, and is light, just tart, and lip-smackingly refreshing.



Grapefruit Soda Cocktail Recipe

Makes 4 servings

Ingredients

* 2 pink grapefruit, juiced 
* 1 lemon, juiced 
* Pinch of salt 
* Vodka (optional) 
* Lemon-lime soda 
* Ice (optional)

Instructions

1. In a pitcher, combine the grapefruit juice, lemon juice, and salt. Run the juice through a strainer to remove any pulp.
2. Fill glasses with ice, then half full with grapefruit juice, top off with a shot of vodka (if desired), and fill the rest of the way to the top with lemon-lime soda.
3. Garnish with lemon slices. Absolutely refreshing!
